“IF I POUR THE BEER BADLY I DESTROY THE HISTORY”

I’m proud of myself – of learning; of being able to understand beer better. But I’m so proud of the beer! Pilsner Urquell is slowly growing in Hong Kong and becoming more and more popular. I’ve been at The Globe for three years, I’m now Bar Manager. I first tried Pilsner Urquell here in 2016, the Tapsters taught us how to pour. I really didn’t think this type of beer existed! I was fascinated by its history and origins. I try to translate it to everyone. Hong Kong is a big place for beer, we get a lot of expats and locals in our bar. Most people don’t have knowledge of Pilsner Urquell but my apron makes them more interested. Being a Tapster is all about the love! You want to share your knowledge with everyone. It makes me feel happy when people know about it.

If you were a beer, what beer would you be?

I’d be a Šnyt. It has a longer lifespan. It has a bigger foam to keep my freshness. People enjoy me fresh! Hladinka is the ordinary beer but a Šnyt is a bit different, like me.
